Ingredients
  • 4-Filets of walleye
  • 1-1/2 cups chopped pistachios
  • Salt & pepper as needed
  • Clarified butter as needed
  • 2 cups of tomato Tarragon Relish
  • 2 cups fresh tomatoes (dice small)
  • 6 scallions (chopped fine)
  • 1/2 cup olive oil
  • 1/4 cup tarragon vinegar
  • 1/2 cup ground tomatoes
  • 1/4 cup chopped tarragon
  • salt & pepper to taste
  • STEAMED JASMINE.....
  • 1-1/2 cups water
  • 1 cup rice
  • 1 pinch salt
Directions
Season fish & coat generously with chopped pistachios. Heat saute pan add clarified butter. Saute walleye on both sides, until done, approx. 5 minutes on each side.

Method for cooking relish

Mix all ingredients together let marinate for 15 minutes. Store in refrigerator.

Method for rice.

Wash and rinse rice 3 times. Place water in pot add salt. Cover & bring to a boil. Turn down to very low simmer until all moisture is evaporated. Do not stir. Let sit 5 to 10 minutes with cover on. Serve.

Other Notes
For larger fillets finish in a 350 degree oven for approx. 5 to 8 minutes to finish the cooking process...
