Ingredients
  • 3 tbsp. butter
  • 3 tbsp. flour
  • 1 1/4 c. milk
  • 1 tbsp dry sherry
  • 1/4 tsp. salt
  • 1 1/4 c. grated monterey jack cheese
  • 2 - 10 oz. pkgs. frozen chopped spinach thawed and drained
  • 1/4 tsp. nutmeg
  • 1/4 tsp. satl
  • 8 walleye fillets
Directions
Melt butter in saucepan and blend in flour. Gradually add milk. Bring to boil, stirring constantly; boil 1 minute. Add sherry, salt and cheese. Cook until mixture is smooth; set aside. Combine spinach, nutmeg, salt and 1/4 c cheese sauce. Divide equally and spread on top of each fillet. Roll, fasten with toothepicks and arrange, seam side down, in shallow baking dish. Spoon cheese sauce over all. Bake 350 degrees F for 25 to 30 minutes or until fish flakes easily with fork. Remove picks and serve.
